Apple Muffins

Ingredients

  • 1/2 c AM Garbanzo Flour
  • 1 c AM Instant Oatmeal
  • 1/2 ts Sea salt (optional)
  • 1 1/2 ts Non-alum baking powder
  • 3/4 c Water
  • 1/4 c AM Unrefined Vegetable Oil
  • 2 tb Honey
  • 1 md Apple; grated
  • 1/2 c Raisins (optional)

Directions
Preheat oven to 375 F. Mix dry ingredients. Mix liquids and stir into dry mix. Let sit a few minutes to thicken. Fill oiled muffin tins 2/3 full. Bake at 350 F. for 30 minutes or until done.   • 2 Eggs or egg replacer
  • 1/2 c Water
  • 2 1/2 c AM Whole Wheat Flour
  • 2 ts Non-alum baking powder
  • 1/2 ts Sea salt (optional)
  • 1 ts Allspice
  • 1 ts Nutmeg
  • 1 ts Cinnamon
  • 2 lg Apples; grated (with peel)
  • 1 ts Vanilla
  • 1/2 c -to…
  • 1 c AM Sunflower Seeds
  • -(or chopped nuts)

Directions
Beat honey, oil, eggs and water. Mix dry ingredients and add to honey mixture. Fold in apples, vanilla and nuts. Fill oiled tins 2/3 full. Bake at 400 F. 12 to 15 minutes. Apple Hearth Bread

  • 1 1/2 To 1 3/4 cups unsifted
  • -all-purpose
  • Flour
  • 1 pk Rapid-rising dry yeast
  • 1/2 ts Salt
  • 2/3 c Very warm water (120 degrees

  • 1/2 c Olive oil
  • 1 tb Honey
  • 1 tb Butter
  • 1 lg Golden delicious or other
  • Sweet firm apple, peeled,
  • -cored,
  • And cut into 1/4-inch thick
  • -slices
  • 1/4 ts Coarse (kosher) salt
  • (optional)

Directions
Sweet apples and salty bread provide an intriguing contrast in taste. To ensure that the hearth bread remains light and crisp, keep the dough soft: Don’t work in too much flour and knead it gently. Makes 1 loaf (6 servings) 1. In large bowl of heavy-duty electric mixer, combine 1 1/2 cups flour, the yeast, and salt. Slowly beat in water, 1/4 cup olive oil, and the honey; vigorously beat mixture 10 minutes. Cover bowl with clean cloth and let dough rise in warm place, away from drafts, 40 minutes. 2. Meanwhile, in a large skillet, melt butter. Add apple slices and saute’ until very lightly browned; set aside. 3. After dough has risen 40 minutes, turn out onto floured surface. Gently knead in as much of remaining 1/4 cup flour as necessary to form a very soft dough – about 1 minute. Gently work apple slices into the dough. 4. Lightly oil large baking sheet. With floured fingers, shape dough into a 9 inch round on oiled sheet. Cover with clean cloth and let rise in warm place, away from drafts, until double in size – about 30 minutes. 5. Heat oven to 400 degrees F. With pastry brush, coat top of dough round with 2 tablespoons olive oil; sprinkle with coarse salt, if desired. Bake 15 to 20 minutes or until hearth bread is browned. 6. Drizzle hearth bread with remaining 2 tablespoons olive oil and serve warm. Apple Dumpling Muffins

  • 2 c Flour
  • 1 c Sugar
  • 1 tb Baking Powder
  • 1 ts Salt
  • 1/2 ts Ground Cinnamon
  • 1/4 ts Ground Mace
  • 1/4 ts Ground Cardamom
  • 1/8 ts Ground Cloves
  • 1/4 c Oil
  • 4 tb Butter Or Margarine; melted
  • 2 Eggs
  • 3/4 c Milk
  • 2 Apples; peel, core and slice

Directions
Oven 350?br /> Line each cup of a standard muffin pan with stirps of baking parchment or muffin liners. Sift together all dry ingredients. Make well in center of flour mixture. By hand mix in remainder of ingredients except apples. Fold in apples. Spoon batter into prepared muffin tins. Bake in the preheated oven for 30 to 35 minutes, or until done. Makes 12, 2 to 4 oz muffins, or 6, 6 to 8 oz. muffins. 251 cal. per muffin.   • 1/4 c Onion; Chopped
  • 1/4 c Celery; Chopped
  • 1 c Apple; Diced, Unpeeled
  • 4 c Bread crumbs, Lite
  • 1/2 ts Poultry Seasoning
  • 1/2 ts Sage
  • 1/2 c Chicken Broth

Directions
Saut?onion & celery in margarine (or sprayed pan) 5 minutes, til tender. Transfer to large bowl. Add apples & dry ingredients, stir to mix well. Add broth, toss lightly. Turn into sprayed baking dish, cover and bake at 350 for 45 min. Apple Date Muffins

  • 3/4 c Whole wheat flour
  • 1 c All purpose flour
  • 1 c Wheat bran
  • 1 ts Baking powder
  • 1 ts Baking soda
  • 1 ts Cinnamon
  • 1/3 c Dates; chopped
  • 1 Egg; lightly beaten
  • 1/4 c Packed brown sugar
  • 2 tb Vegetable oil
  • 1 c Low-fat milk
  • 1 c Apple; peeled, grated

Directions
In a large bowl combine the whole wheat and all purpose flours, bran, baking powder, baking soda and cinnamon. Stir in the dates. In another bowl, beat the egg with sugar and oil until well mixed, then stir in the milk and apple. Pour into the flour mixture and stir just enough to moisten, being careful not to overmix. Spoon into nonstick or paper-lined medium muffin tins, filling almost to the top. Bake at 375 degrees (F) for about 20 minutes, or until firm to the touch.   • 2 1/4 c Oat Bran Cereal
  • 1/4 c Brown Sugar; Packed
  • 1 ts Cinnamon
  • 1 tb Baking Powder
  • 1/4 c Walnuts; Chopped, Optional
  • 1/2 c Raisins
  • 1/2 c Skim Milk
  • 3/4 c Frozen AppleJuiceConcentrate
  • 2 Egg Whites; Large
  • 2 tb Vegetable Oil
  • 1 Apple; Chopped, Md

Directions
Mix the dry ingredients in a large bowl. Mix the milk, apple juice concentrate, egg whites and oil. Blend well. (Can be done in a blender.) Add to the dry ingredients and mix well. Add the chopped apple and spoon into muffin cups that have been sprayed with a non-stick coating. Fill three-fourths full and bake in a 400 degree F oven for 15 to 17 minutes, or until done.
