Directions Combine oat bran and baking powder; add to combined milk, egg whites and margarine, mixing well. Heat a 6 to 7 inch crepe pan or skillet over medium heat; lightly coat with non-stick spray or lightly oil before making each crepe. Pour about 1/4 cup batter onto hot prepared pan; immediately tilt pan to coat bottom evenly. Cook 1 to 1 1/2 minutes or until top looks dry. Turn; cook an additional minute. Stack between sheets of wax paper. Combine ricotta, apple, raisins, sugar and vanilla; mix well. Spoon about 2 tblsp. along less evenly browned side of each crepe. Fold or roll up sides to cover filling. Combine syrup and cinnamon; heat over medium heat about 2 minutes, stirring occasionally, or until heated through. Add flour, soda, nutmeg and cinnamon. Blend in apples. (If mixture is too stiff, add 1/2 cup water.) Spread dough in a greased and floured 8×10-inch baking pan or cookie sheet with 1-inch sides. Bake for 30 minutes. (Be careful not to overbake.) LEMON SAUCE: Put water, sugar, flour, butter and lemon juice in saucepan with the halves from one of the juiced lemons (to impart a bit of lemon oil). Bring to a boil. Remove lemon halves. Boil for 2 minutes while stirring. To serve, cut pudding into squares and pour hot sauce over them. Or omit sauce and dust with confectioner’s sugar. Directions This is a quick and delicious bit of Virginia history. Jefferson planted several varieties of apples and they can be seen in the daily cooking of the plantation. We assume that this recipe came from the old original Monticello cookbook. Mix all of the above together well and put in a pie shell or a baking dish. I prefer a small baking dish. Directions ———————————-TOPPING———————————- 1/3 c Flour 1/3 c Brown sugar 2 tb Margarine; softened 1/2 c Slivered almonds Place bread dough on greased 12 inch deep dish pizza pan. When thawed completely, pat dough on bottom and 1/2 inch up sides of pan. Let rest 15 minutes. Combine cream cheese, 1/4 cup sugar, egg and vanilla until smooth. Spread over bottom of crust. Combine apples, 2/3 cup sugar, 1/4 cup flour and cinnamon. Arrange evenly over cream cheese mixture. In a small mixing bowl, combine 1/3 cup flour and brown sugar. Cut in margarine until mixture is crumbly. Add almonds. Sprinkle evenly over apples. Bake at 350F for about 40 minutes, or until golden brown. Mix pie crust sticks according to directions and place the dough on a pizza pan. Put on apples, add pats of butter. Put on top crust, crimp edges and roll under. bake at 425 for 45 minutes. Remove from oven and cool.
