Spiced Pecan Halves

Ingredients

  • 1 c Sugar
  • 1/2 ts Cinnamon
  • 1/3 c Evaporated milk
  • 2 c Pecan halves
  • 1 ts Vanilla

Directions
Boil sugar, cinnamon, and evaporated milk to the soft ball stage (240 degrees F on a candy thermometer). Add pecan halves and vanilla. Place on waxed paper and let dry. Sun Dried Berry Zucchini Nut Bread

Ingredients

  • 3 Eggs
  • 1 c Canola oil
  • 2 c Sugar
  • 1 ts Vanilla
  • 2 c Zucchini — grated
  • 2/3 c Carrots — grated
  • 3 c Flour
  • 1 ts Salt
  • 2 ts Cinnamon
  • 1/4 ts Baking powder
  • 1 ts Baking soda
  • 1/2 c Walnuts
  • 3 oz Sun dried cranberries,
  • Cherries or — blueberries

Directions
Preheat oven to 325 F. Grease and flour two 9×4″ bread pans. Beat the eggs slightly and add the oil, sugar and vanilla. Mix well. Add the grated zucchini and carrots and mix well. Stir the flour, salt, cinnamon, baking powder and soda together. Add to the egg mixture and blend until all ingredients are well combined. Add the nuts and berries. Stir to distribute evenly. Pour this mixture into the floured bread pans. and bake for 65-75 minutes until a toothpick inserted into the center comes out clean. Allow loaf to cool for about 5 minutes in pans on cooling rack. Remove from pans to rack to complete cooling. Once cool, wrap in plastic wrap and chill. Turmeric Stuffing

Ingredients

  • 2 c White basmati rice
  • 4 c Canned chicken broth
  • 1 c Finely chopped celery
  • 1 lg Finely chopped onion
  • 1 c Broken cashews
  • 1 Clove garlic — finely
  • Chopped
  • 1 c Raisins or currents
  • 2 tb Turmeric powder
  • 1 Egg
  • 1/2 c White wine
  • Butter — as needed
  • Salt and pepper — to taste

Directions
1. Saute dry rice in butter (4 tablespoons) until translucent. (don’t burn!) Add the celery, garlic, onion and turmeric powder. Mix well in pan. Cook for a couple of minutes, take of the stove and add the chicken broth, raisins and nuts. 2. Bring the whole thing to a boil, then turn down to simmer, tightly cover and simmer for about 20 minutes. Let rice cool down, then fluff with a fork. 3. Break egg into small dish, mix with a fork and add about 4 tablespoons melted butter along with the wine. Mix this into the rice. . . . . that’s it. Tropical Tea Bread

Ingredients

  • 1/4 c Butter or margarine –
  • Softened
  • 2/3 c Mild flavored honey
  • 2 Eggs
  • 2 tb Milk
  • 1/2 ts Vanilla
  • 2 c Flour
  • 1/2 ts Salt
  • 1 ts Baking powder
  • 1 ts Baking soda
  • 1 c Flaked coconut — toasted
  • 1 c Mashed ripe bananas
  • 2 ts Grated lemon peel
  • 1 ts Fresh lemon juice
  • 1 c Chopped walnuts or pecans

Directions
To toast coconut: Spread on baking sheet and toast at 350F for 6-7 minutes, stirring occasionally. Cream butter. Add honey in a fine stream while beating. Beat in eggs, one at a time. Stir in milk and vanilla. Sift flour with salt, baking powder, and baking soda. Add coconut and nuts. Mix mashed bananas, lemon juice and lemon peel. Add dry ingredients alternately with banana mixture to butter mixture, blending only until all is moistened. Spoon into a well greased 9?by 5?loaf pan. Bake in 350 F oven for 55 minutes. Allow to cool in pan for 5 minutes on wire rack, then remove from pan and allow it to cool on a wire rack. This bread slices better as it ages. It ages and freezes well. Torta De Castanha Do Para (Brazil Nut Cake)

  • 6 Eggs; separated
  • Granulated sugar
  • Instant coffee
  • 1/2 ts Salt
  • 2 tb Packaged dried bread crumbs
  • 1 tb Brandy
  • 2 c Finely-ground Brazil nuts;
  • -(abt.3/4 lb.shelled)
  • 1 1/2 c Heavy cream
  • 1/4 c Brazil nuts; slivered*

Directions
Early on the day: Start heating ove nt o350 F. Grease, line with wax paper, then grease again bottom of two 8 inch layer-cake pans, 1 1/2 ” deep. In large bowl, with electric mixer at High speed, beat egg yolks with 2/3 cup sugar until very thick and fluffy, about 10 minutes. Now beat in 1 tsp. instant coffee, salt, bread crumbs and brandy; then fold in ground nuts. Beat 6 egg whites until stiff, but not dry; fold them gradually into nut mixture. Pour into prepared pans, then bake 35 minutes or until cake tester, inserted in center, comes out clean. Cool in pan. About one-half hour before serving: Loosen cake layers around edges and trun out on racks; remove wax paper. Whip cream until stiff. Dissolve 2 tablespoon instant coffee in 1 tablespoon water; fold with 3 tablespoons sugar, into whipped cream. Use to fill and frost cake; garnish with slivered nuts. Refrigerate until ready to serve. Cut into 12 wedges. *To sliver shelled Brazil nuts easily, first cover them with water, simmer 2-3 minutes, then drain. Unusual Banana Bread

  • 1/2 c Shortening — (Crisco)
  • 1/2 c Sugar
  • 2 Eggs
  • 2 c Flour
  • 1 ts Soda
  • 1/8 ts Salt
  • 3 md Bananas — mashed
  • 1/4 c Nuts
  • 1/2 c Nuts
  • 1/2 c Chopped maraschino cherries
  • 1/4 c Chocolate chips

Directions
